I love scones. All kinds of scones. And, I have to admit that often times when faced with a choice of pastries, my eyes tend to wonder towards what, I consider to be, the drier ones. Scones, biscotti, crumbly cookies. After all, these are perfect with a cup of coffee which is my other passion and the cozy combination of the two is magical to me.
It wasn’t until recently, however, when I stumbled on this Glazed Lemon Blueberry Scone recipe from Sally’s Bake Blog that I discovered that not all scones are actually created equal. In other words, scones, unlike biscotti, don’t have to be dry which made me fall in love with them even more.
Bursting with blueberries and lemon zest, these buttery, flaky and moist scones are most likely the best I’ve ever tasted. And, I haven’t even mentioned the perfectly crisp edges and the sweet-tangy lemon glaze. The secret to these (shhh, don’t tell anyone) is frozen grated butter.
That’s right, Sally has come up with a genius idea for freezing and grating butter which is then cut into the dry ingredients to create millions of tiny butter coated crumbs. As the scones bake, the butter melts and steam is released which creates the buttery and flaky pastry that I know you’ll love.
If you have stayed away from making scones because you think that they’re fussy or difficult to make then you’re in for a treat. These couldn’t be easier and, if you have 30 minutes, you can have these scones on your table today. They require simple ingredients, flour, sugar, baking powder, vanilla extract, butter, eggs, heavy cream, lemons and blueberries (fresh or frozen). And, if you’re like me, you might even already have these on hand.
Toss the dry ingredients together, cut in the frozen butter, add the wet ingredients and blueberries, and mix everything to combine. Form the dough into a disc, divide it into eight wedges, brush with a bit of heavy cream and sprinkle with coarse sugar to create a beautiful golden color and crunch. Then off to the oven they go. Then, as thought these aren’t perfect enough already, a quick mix of confectioner’s sugar and lemon juice will create a sinfully delicious lemon glaze that’s poured over the warm scones allowing them to soak up all the tangy goodness and add moisture to what is already an amazing creation.
