Are you on team cookie or team cake? Or are you like me and happy to eat either one at any time? Now you don’t have to choose. For those of you who have never had a Madeleine, these are the perfect combination of the two. In fact, if the most rich cake and luscious cookie in the world had a baby, it would be these treats.
Tender, cake-like, chubby bellies, crispy edges and beautiful shell shapes, these are the most exquisite little cookie-cakes and ones that my husband happens to adore. For years he would buy them from a store and, although I thought they were fine, they never really did much for me. Maybe that’s why I put off making them for so long. Or perhaps, it’s because the one baking gadget that I lacked was a madeleine pan. That is until I came across a honey madeleine recipe from Zoe bakes. and knew that I had to try it out as soon as possible.
Browned butter, honey and lemon zest…I was intrigued. And, just one bite proved that all the store bought madeleines that I had tried in the past were nothing more but cheap imitations of the real thing. But the true test came when my husband took a bite and immediately asked me when I would be making these again.
Zoe points out that the true success to this recipe is using a strong flavored honey. I chose orange blossom honey, and to compliment this flavor, I substituted orange zest for lemon zest. The outcome was outstanding in the flavor category.
But you know that I can’t leave well enough alone. So, in true Jennifer fashion, I decided to dip them in an orange glaze. A cup of confectioners sugar mixed with a few tablespoons of fresh orange juice proved to be the perfect toping for the perfect treat. Completely optional but definitely worth it if you want to take these little beauties to the next level.
